In Pursuit of Purity: The Paris Chocolate Files, is truly a delight to read. Being accustomed to the Hershey variety of chocolate (not that there’s anything wrong with that), I was surprised to discover the many complexities of gourmet chocolate, in particular the dark varieties, with its many tiered notes. Each chocolatier blends their creations with layers that hint of veggies, herbs, wine, and much more as they make each batch. Many are also artists who sculpt chocolate. I particularly enjoyed Michel Chaudun’s chocolate staircase with a lost shoe, and Patrick Roger’s orangutan. This book will take you on a most amazing and delicious journey through the chocolate shops of Paris. Kalei’s words describing the chocolate experience are fantastic enough, but add to them the gorgeous pictures, and you have a book to enjoy again and again.
